INGREDIENTS
Dressing:
1 Tbsp lemon juice
2 Tbsp red wine vinegar
1/4 cup olive oil
Salt & pepper
SALAD
1 pint grape tomatoes
1 cucumber
1/2 red onion
2 oz. feta
1 15oz. can cannellini beans
1 12oz. can chunk light tuna
Lettuce wraps
INSTRUCTIONS
Combine the olive oil, red wine vinegar, lemon juice, salt, and pepper. Mix well.
Dice red onion
Halve tomatoes
Quarter cucumbers
Combine veggies in bowl and top with dressing mix, stir
Drain tuna
Drain beans and rinse
Add feta
Add tuna
Mix gently & serve
* Can substitute chicken if you prefer
